Could I use sparkling red wine instead of normal red wine in a recipe?

I just opened a bottle of red wine that I had lying around and, much to my surprise, it’s sparkling. I was going to drink some tonight and use the rest tomorrow in a pasta sauce. Now (and this might sound a little silly) will the fact that the wine is fizzy have any effect on the sauce? I don’t want my dinner to taste fizzy!
It is proper wine, not a wine cooler.

Have your husband and sons gather all the cherries off the cherry tree as they can, bring them in the house to you, and you crush all of them in a colander, save all the juice, throw away all the pits, then strain about a quart or more of the juice, heat it for a while to purify it, then mix it with about four cups of sugar and a package of yeast, pour it into a bottle, tie a balloon on top, and let it sit in your closet for a month. Then strain it through some cheesecloth and put it back in a bottle with a topper or a cap and keep it in the fridge. Mine was a little dry so I mixed some sugar and water with it and it’s really great and I just finished the bottle and I’m a little high now. Did I make some great hooch or what?

Does anyone have an easy step by step recipe for cheap homemade wine?

I have researched and every recipe is different , I know the basics, fruit juice, yeast and you put it in a jug and put a balloon over it, but some recipes say to poke holes in the balloon and some don’t and some recipes call for acid blend and some dont, some say to boil the sugar and water, but when do you add the yeast and how, I am confused. I just want to make a wine that tastes pretty good, but doesnt call for lots of expensive ingredients.
