These evidences convey that humans who lived a long, long time ago already had sufficient knowledge in the basic processes of homemade wine making. If we ask them now “how do you make wine?”  they will tell us that they did so at their very own homes and backyards, using the grapes they picked from their own vineyards.</p>
<p>“How do you make wine?”</p>
<p>The following will tell you many details:</p>
<p>-    Georgia and Iran were the two regions where early evidences of wine making were first found. The evidences date back to 6000-5000 B.C.<br />-    In Macedonia and Europe, there were evidences dug up by archeologists depicting that people 6,500 years ago already had knowledge in wine making.<br />-    Ceremonies were the center of life among the Egyptians. True enough, there have been paintings on ancient tombs and walls depicting wine making as being included in their rituals and ceremonies.<br />-    In China, evidences of wine making among the Chinese trace back to 2000-1000 B.C. </p>
<p>The diets of the classical Greeks and Romans were not complete without at least a glass of wine. This is very essential in their meal plans and couldn’t actually eat without being served a glass of it. They make sure that this is the case because they were very proud of the technology they have discovered at that time. This technology I am referring to is what they called the Wine Press technology.   This technology particularly made wine making very simple, easy and fast for them. “How do you make wine?” They used it to produce wine from various kinds of grapes, it helped them create various techniques in land growing and made them become creative in barrel making, wine storage and shipments.</p>
<p>We ask them again, “How do you make wine?”  We all know that a time came called the fall of the Roman Empire. When this happened, the Catholic Church imbibed their tradition and incorporated wine in their ceremonies particularly in the celebration of the holy mass. The use of wine as a symbol of the blood of Christ is a high point in the Catholics’ Eucharistic celebration. Wine then became a necessity for them which brought about the spread of wine use sometime in the 15th century. This is the case for the Catholics. For other religion like Islam, use of any alcohol was forbidden unless it was for healing or remedies.</p>
<p>During the prehistoric times, there were little or no evidence at all as to wine making. “How do you make wine?” Archeologists only speculated that prehistoric people also concocted their own homemade wine from wild grapes and fruits and eventually led to other evidences in the early times.</p>
<p>With these things, we can say that it is indeed quite hard to pinpoint where wine making really started. Evidences point to all sorts of different directions. Some say it originated from the vastness of the African continent while others point to the huge lands of South and Central Asia. We can never really know for sure.  What we can be sure of is that our contemporary or current wine making activities did stem from the ancient Greeks’ tradition. This is because the grapes being used in modern day Greece are similar to those used in the ancient Greek period.</p>

Until in the 80’s when it really gained a huge following in the market and began selling big. Actually, these California wine grapes only appeared as a varietal label in the 70’s. But it was in the 80’s that it really started selling big until it eventually controlled the wine market. They are widely used among enthusiasts and consumers who are starting to learn about how to make wine at home.</p>
<p>Merlot is the so-called insurance for the vineyard. This is so because the Merlot grapes tend to ripen one week earlier than the other varietals like the Cabernet. Thus, rain plays a huge part in its harvest.</p>
<p>Every type of wine has a proper temperature to which it should be served. As for Merlot, it is best served slightly below room temperature. If not, once the alcohol hits 74 degrees F, the taste of your wine will turn a bit sharper than usual and I’m not sure if you’d like that. This is why it’s better to refrigerate or cool your wine for about 15 minutes before serving it.  By doing so, you can be assured that your wine will be served at the best temperature possible which will preserve the good taste of your wine.</p>
<p>How to make wine at home, particularly Merlot, is pretty easy. It’s the most basic and is practically similar with the process of making any homemade wine. Of course, all equipment must be prepared well and all ingredients must be gathered first. There are additional ingredients used on how to make wine at home aside from the usual ingredients. You need to add 22 liters of merlot juice and 1 liter of blackberry juice. This will add flavor to your homemade Merlot wine.</p>
<p>Below are the easy steps on how to make wine at home. Follow them step by step and you would produce one great tasting Merlot wine. And then you will realize that it really is just easy to create your own homemade wine.  Eventually, you will be able to make your own wine recipe and hopefully even learn to profit from this fantastic hobby of yours.</p>
<ol>
<li>Combine potassium metabisulphate and one gallon of water in a bucket that you’ve prepared. Use the cloth and immerse it in the solution for about five minutes. When this is done, you will use the same cloth when you clean the fermenters. </li>
<li>Mix the blackberry and merlot juices in one of the fermenters and stir them very well.</li>
<li>Then add the yeast and Lalvin EC1118 champagne yeast right on top. After one hour of setting it aside, stir them again. </li>
<li>Every day, for the next five days, keep stirring the mixture once each day. Let it sit again for another two days. </li>
<li>In learning how to make wine at home, it is important to tightly seal the mixture and leave it for 21 days. </li>
<li>Using another fermenter, siphon the mixture from the first bottle to the second bottle. Let it sit again for the next 28 days. </li>
<li>After that period, your Merlot wine is quite ready for bottling. Once it’s bottled and corked, leave it for an additional 90 days maximum just to make sure it has aged well. </li>

The riper the grapes are, the more flavorful, richer and more complex your wine will be. Therefore, do take all the time you need in sorting out the grapes prior to starting wine making at home.</p>
<p>There is evidence brought about by the long lived tradition of wine making that when you use uncrushed Carignan grapes, they respond better to fermentation.  If you were able to take out the little twigs and stems, the wine you’ll produce will have a smoky, meaty, earthy aroma otherwise, it will be sweet and berry-like.</p>

<p>The Process of Fermentation</p>

<p>This is the process when the yeast feeds on the sugar and creates two by-products: carbon dioxide and ethanol (alcohol). Hence, in order for you to accomplish this, you will definitely need wine yeast and sugar (or any sugary product) that are mixed together. <p>Racking</p>

<p>This is the second stage on how to make wine. Racking is when you transfer or what wine makers call “siphon” the wine from the first container to the second container. You should do this after about letting the must ferment for 10 days so that dead yeast won’t get in the way or affect the flavor of your wine. The purpose here is to be able to get as much amount of wine as you can while leaving the dead yeast behind. In the process of doing this, it is unavoidable to lose a little amount of wine of course. The way to remedy this is to add a bit of tap water into the siphoned mixture and then wait.</p>
<p>Airlock</p>
<ol> </ol>
<p>For two to four weeks, the airlock on the bottle must be on and the bottle must be properly sealed.  At the end of this period, you should already have your first homemade wine. But actually, the longer you let it sit in the second bottle, the better tasting your wine will get so it is totally up to you if you want to open the bottle at the end of the 4th week. Needless to say, this second stage on how to make wine or that of fermentation can reach up to 12 weeks or 3 months.</p>
<p>Stabilization</p>
<ol> </ol>
<p>Stabilization is trying to stop the yeast and sugar from further fermenting. There’s a proper level of fermentation that you should follow in order to produce the best tasting wine. In doing this, you must use Potassium Sorbate which is the best stabilizer. This chemical does not kill the yeast but it helps stop fermentation.</p>
<ol> </ol>
<p>Bottling</p>
<p>On how to make wine, you don’t just prepare your bottles and corks towards the end of the wine making process. These should of course have been ready right at the start. You may ask for used bottles and corks in your local stores but again, remember to clean and sterilize them well. In filling up each bottle with your homemade wine, do so right up to the neck and cork of each bottle one by one. You can also do this all at the same time. It’s up to you. Just please be careful to not splash the contents inside and do your siphoning as quietly as possible.</p>

From that, we have the word &#8220;honeymoon&#8221; today. Although honeymoons are very popular with newlyweds, today mead is not drunk as often as it used to be.</p>
<p>Meads can be a delicious alcoholic beverage to be enjoyed on any occasion. Making it is not any different than making wine at home. It requires the same equipment as winemaking. The same fermentation process that is used to make grape and fruit wines is used in meadmaking. It can be fermented dry or sweet depending on your preference. When sweet, a mead is referred to as a &#8220;sack mead.&#8221; A basic recipe only requires honey, water, yeast and time. Grape tannin may be added for additional &#8220;mouth feel&#8221; when drinking.</p>
<p>When making mead, one thing to keep in mind is that it the flavors definitely improve with aging. I like to bulk age my meads in the carboy for two years before bottling them. Six weeks after bottling, it can then be consumed and enjoyed.</p>
<p>For dry <noindex><a target="_blank" rel="nofollow" href="http://best-fine-wine.com/goto/http://homewinery.info/subject.php?c=23&amp;catname=Meads" rel="nofollow" target="_blank" >meads</a></noindex>, I have had success with <noindex><a target="_blank" rel="nofollow" href="http://best-fine-wine.com/goto/http://homewinery.info/viewarticle.php?id=65" rel="nofollow" target="_blank" >Lalvin EC-1118 yeast</a></noindex>. For sweeter ones, I&#8217;ve had good experiences with a liquid yeast made by White Labs (Sweet Mead Yeast # WLP720).</p>
<p>As well as making basic mead, other ingredients can be added for additional flavors. Technically speaking, these types of drinks have different names. If you add herbs and/or spices to the honey and water you are going to ferment, you are making a &#8220;Methoglin.&#8221; Spices that you might want to consider include rosemary, clove, vanilla, ginger and thyme. Of course, any herb or spice might be worthwhile experimenting with.</p>
<p>When you add the juices of fruit, you are making a &#8220;Melomel.&#8221; Some of my favorites include those made with kiwi, strawberry and blueberry. Like methoglins, you can try any type of fruit that you might enjoy. Other suggestions to think about include apple, peach, cranberry and cherry.</p>
<p>When making melomels, you will need to think about the amount of pectin in the fruit and like making fruit wines, need to consider the addition of <noindex><a target="_blank" rel="nofollow" href="http://best-fine-wine.com/goto/http://homewinery.info/glossary/glossary.php?q_id=44" rel="nofollow" target="_blank" >pectic enzyme</a></noindex> to prevent a haze occurring.</p>
<p>Making meads gives you an opportunity to offer your guests something delicious that they probably have never had before. If you already make wine, you won&#8217;t need any extra equipment to try making delicious fermented beverages with honey as the base.</p>
