Until in the 80’s when it really gained a huge following in the market and began selling big. Actually, these California wine grapes only appeared as a varietal label in the 70’s. But it was in the 80’s that it really started selling big until it eventually controlled the wine market. They are widely used among enthusiasts and consumers who are starting to learn about how to make wine at home.

Merlot is the so-called insurance for the vineyard. This is so because the Merlot grapes tend to ripen one week earlier than the other varietals like the Cabernet. Thus, rain plays a huge part in its harvest.

Every type of wine has a proper temperature to which it should be served. As for Merlot, it is best served slightly below room temperature. If not, once the alcohol hits 74 degrees F, the taste of your wine will turn a bit sharper than usual and I’m not sure if you’d like that. This is why it’s better to refrigerate or cool your wine for about 15 minutes before serving it.  By doing so, you can be assured that your wine will be served at the best temperature possible which will preserve the good taste of your wine.

How to make wine at home, particularly Merlot, is pretty easy. It’s the most basic and is practically similar with the process of making any homemade wine. You need to add 22 liters of merlot juice and 1 liter of blackberry juice. This will add flavor to your homemade Merlot wine.

  1. Combine potassium metabisulphate and one gallon of water in a bucket that you’ve prepared. Use the cloth and immerse it in the solution for about five minutes. When this is done, you will use the same cloth when you clean the fermenters.
  2. Mix the blackberry and merlot juices in one of the fermenters and stir them very well.
  3. Then add the yeast and Lalvin EC1118 champagne yeast right on top. After one hour of setting it aside, stir them again.
  4. Every day, for the next five days, keep stirring the mixture once each day. Let it sit again for another two days.
  5. In learning how to make wine at home, it is important to tightly seal the mixture and leave it for 21 days.
  6. Using another fermenter, siphon the mixture from the first bottle to the second bottle. Let it sit again for the next 28 days.
  7. After that period, your Merlot wine is quite ready for bottling. Once it’s bottled and corked, leave it for an additional 90 days maximum just to make sure it has aged well.

    5. Keep it clean. Any strong odors, be it from mold and mildew, varnished wood, and strong cleaning solvents can enter the wine through the cork and cause a tainting of the wine. By keeping the area clean of the mold and mildews that can build up in the humid environment, and by allowing any varnished wood to completely dry before using, this problem can be completely avoided.

Large scale wineries use press juice so as to improve its overall production volume.

    The ingredients to make a good beer are simple. They are: yeast, hops, malt (usually in an extract) and water. After sanitizing the equipment and depending on the type of beer there are several methods for making beer. The selection of water is very important to produce a good tasting beer. The following are acceptable – boiled tap water, charcoal filtered water. Use of distilled water is discouraged. It is important to carefully watch the temperature when working with the yeast.

    Basically the steps for making beer are: Boil water; boil wort (liquid extract from mashing process; add hops (either bittering or finishing); prepare fermenter; lower temperature; prepare the yeast; put wort in fermenter; fill fermenter with cold water; add yeast; fill sturdy container with water and set beside fermenter, insert one end of tubing into fermenter and other end in container of water (you will see active bubbling at this stage); after activity of yeast slows, remove tube and insert stopper and air lock.

    It’ll take about two to three weeks for the fermenting process to be complete. The beer will turn from a milky color to a clear ale color. Once this happens pour the beer into sanitized bottles and cap. It’s ready to drink.

    Potassium Or Sodium Metabisulfite? Which Should the Home Winemaker Use?

    New home winemakers often get confused between potassium metabisulfite and sodium metabisulfite. Some winemaking guides only refer to sulfite and it’s up to the reader to try to understand which form of sulfite the author was referring to. What’s the difference? And does it really matter?

    Both potassium and sodium metabisulfite are used as sanitizing agents and as additives to wine to protect it from oxidation and to inhibit bacteria growth. When used in a solution with water, both can sanitize winemaking equipment and the workspace where wine is being made. When added directly to wine in small amounts, it releases sulfur dioxide (SO2) gas which is what protects wine from oxidation and micro-organisms.

    Potassium metabisulfite, which is sometimes abbreviated as KMS, K sulfite, and K-meta, comes in a powder form. The sodium version is available in powder as well as tablets which are usually referred to as “Campden Tablets.” Some suggest that KMS and sodium metabisulfite are exactly the same, however this is not completely true.

    Although they can be used interchangeably for the same purposes of sanitizing and preservation, those on a restricted sodium diet should try to use only potassium metabisulfite in their wine. Another difference is that the sodium version can contain a slightly smaller amount of sulfur dioxide.

    When purchasing a wine kit, the type of sulfite that is included which is to be added to the homemade wine after it has completed fermentation is potassium sulfite. It is best to follow the directions exactly and add this to your wine in order to protect it during the degassing stage, prior to clarifying and bottling. If you are planning on aging your wine for a couple of years or more, you may want to consider adding an additional amount of KMS prior to bottling or while it is bulk aging in the carboy.

    Three Common Mistakes Made by Home Winemakers

    Have you been disappointed with the way your homemade wine has turned out? I know quite a number of people who have not been pleased with their results. Sometimes it’s off flavors. Or worst of all, wine turning into vinegar. Here are some common mistakes that home winemakers often commit which could result in something your not all that proud of:

    Mistake #1 – Not Sanitizing Equipment

    This is quite possibly the biggest and most often made mistake of home winemakers. Just because a batch of wine turned out fine previously, and you didn’t spend the extra few minutes sanitizing your equipment doesn’t mean you’ll be so lucky every time. It only takes a few minutes and can save a lot of frustration and feelings of wasted time to mix up a solution of potassium metabisulfite and water (3 Tablespoons per gallon of water) and use it on your equipment, primary fermentation pail and carboy.

    Mistake #2 – Assuming Fermentation is Complete

    Have you ever had bottles of wine that exploded or the corks suddenly started popping out? This is caused by pressure build up of carbon dioxide in the bottles, usually due to yeast that are consuming any remaining sugar. Some people think that by adding sulfite and potassium sorbate, they can stop the fermentation before it’s complete and end up with an off dry, semi-sweet or sweet wine. It is unlikely that by adding sulfite and sorbate that a fermentation will stop. Adding sorbate will simply prevent yeast from reproducing and restarting a fermentation.

    Let your wine ferment completely. If you wanted to end up with something sweeter, add a sweetener after the fermentation has completed.

    Mistake #3 – Drinking Wine Too Soon

    Although 4 week winemaking kits appeal to those who want to have wine quickly in order to consume it, all wines can benefit from some further aging in the bottle. Avoid drinking it for at least a week after you’ve bottled it. If you can, wait several months. After bottling, wine can suffer from bottle shock where the flavors become muted and sometimes referred to as “disjointed.” It’s a temporary condition and you will find that your wine improves if you give it some time.

    Keep these mistakes in mind while you make your wines, and by avoiding them you will increase your chances of having something you will be proud to serve others.
