No Sour Grapes: Overcoming the Odds to Create a Nevada Wine Industry

Halbardier’s Tahoe Ridge Winery, located on the eastern slope of the Sierra Nevada, now produces 13 varietals and 150,000 bottles of wine a year. But starting up the winery, which sits at 4,700 feet and can see temperatures as low as minus 25 degrees in winter, was arduous. He decided to grow grapes on a whim after moving to Reno from Sacramento. Not only did he not know a thing about the business, but he didn’t let it phase him that it had never been successfully done in Nevada. For the first eight years, every vineyard he planted had the same result: some 70% of the grapes died over the winter. “I was pretty much at the point where it was, ‘OK, we had given it a try,’” he recalls. “I had lost a lot of money.”

The breakthrough came when Halbardier learned about a cold-hardy grape varietal being developed at the University of Minnesota. In 2000, he planted around 500 vines using the university’s seeds. Come harvest time, Halbardier was shocked to find that almost all the grapes had survived the cold high-desert nights. “We were amazed. It was ‘Holy Guacamole!’ It totally surprised us.” That year, Tahoe Ridge Winery produced the first commercial wine ever made with Nevada-grown grapes. The 466 bottles of Chardonnay sold out in two weeks. In 2002, Tahoe Ridge made its first red wine, a Limberger, and the following year opened a tasting room and marketplace in Genoa, 42 miles from Reno. On a cold winter morning this past December, Halbardier had another premiere—he harvested the first ice-wine ever produced west of the Rockies.

Although Halbardier has found success, he is ever mindful of the long, laborious journey it took to get there. “Where we are today is a lot different than when we started. We don’t forget our roots.” He likes to remind his employees that the winery started with two barrels of wine and now produces 700 a year. From field to table, another dream harvested.

CEO/ Former Actress Turns Sour Grapes into Successful Wine-Cabinet Business

When enjoying the seas of well-earned lives, there will be times when the waters are calm and you can put the ship on cruise control. You will be enveloped in sunshine as you navigate all that life has to offer. But, when the waves start crashing down and everyone is counting on you to step up as the captain of the boat, will you be able to bring your ship to shore like India Hynes, a woman who has shown the world that she can keep her head above water during even the most uncertain of storms?

Hynes began her adult life with smooth sailing. After having grown up in Los Angeles, she graduated from Cal State Northridge University. Though she got her degree in communications, she decided to dip her toe in the Hollywood pool and became an actress. At first, the water was fine.

She never made it to the top of the industry, but achieved success as an actress who enjoyed what she did. She starred in several commercials and television shows, including a role on The Young and The Restless. The parties, the access, and the western dream were all at her fingertips. She would go clubbing and indulge in many of the excesses that came with the Hollywood lifestyle. But, when all the twinkling lights turned off and the curtain calls were all finished, Hynes was left feeling empty. “At 25, I said to myself, ‘at 35, I’m not going to wake up and be in the same position.’”

She had decided to leave the applause and paparazzi behind her, and started working for a media-leverage firm, proving that her degree in communications wasn’t for naught. But she disliked working under a boss and decided to set out into the world and see if she could make it in business, like her father. He had lived in Casablanca before joining the French Legion, and was captured and held as a prisoner of war until he escaped. He then fled on a boat to Ellis Island, where he stayed for a while after forging a document that said he was from the Bronx. He then fought in World War II for the U.S. before moving to California, where he created one of the first mail-order companies in America. He since became part of several business ventures, including owning one of the first retail computer stores selling Apple, Texas Instruments, Atari, and HP products in the 70’s and 80’s.

Hynes started her own gift-basket store, which was almost immediately a success. As the baskets went flying off the shelves, she started to have to work harder and put in more time to keep up with the demand. It soon became obvious that she would somehow have to expand her business plan. So she swallowed her pride and asked her dad to use his company to ship the baskets. In return, she would help out at his current business venture, a wine-cabinet company called Vinotemp, which India’s father started in 1985.

But, while Hynes thought that she had braved the twister in her life, she had really just been rowing in the eye of the storm. With little warning, her father passed away, a devastation that turned her world upside down. She went from an employee with her dad as boss to a CEO with little direction and no previous experience at the helm of a company. People were now relying on her so that they could go home and feed their families; the pressure was immense. “When I started taking over it was just so overwhelming, between my father passing and managing a company.”

Though it seemed an overwhelming task, she did not drop anchor and hope for the best, or hand the ship’s wheel over to someone else. She took control of the company and forged a path that would have impressed even her father. India proudly states, “What I’m most proud of is that our brand has become a household name within the industry, everyone knows who Vinotemp is and what we do.”

Today, Vinotemp sells its wine cabinets to store chains like Home Depot and Target, while also making custom cabinets for prestigious clients like the Bellagio Hotel in Las Vegas. In dealing with large retailers, India has found there is tremendous importance in terms of payments and pricing products correctly as retailers at times will provide unauthorized credits to customers leaving suppliers with a large bill to foot. Though they often have to fight tooth-and-claw for their consumers’ attention because of cheaper companies, Hynes says that she knows her company will stay afloat because of the top-notch quality standards her company keeps. “You just don’t get that guarantee from China.” India recommends to fellow entrepreneurs, “if you are going to have products made overseas make sure you have quality control, quality control, quality control.”

Now a wife and mother, Hynes has scaled back the company’s growth to focus more on her personal life. Though she could have quit and “just lunched with the ladies and shop all day,” she admits that her voyage in the world of business has not yet reached shore.

“I wouldn’t know how to not do anything.”

Desert Wines Are Oh So Sweet

You have just finished a lovely meal, satisfying really, in a chic new restaurant that just opened in your area. As you begin to replay the evening’s delicacies in your mind you are suddenly interrupted. In front of you is placed the piece de resistance, a perfectly chilled, shimmering glass of Sauterne and a thinly sliced wafer of foie gras.

For many gourmets this single course would be the showstopper, the best of the entire evening. It perfectly embodies the play of sweet and savory that works so well with a dessert wine and a meat.

Dessert wines are an essential niche of the wine making industry but they are not as common as the reds, the whites, and the sparkling wines. And, they go by several different names. In England they are sometimes termed pudding wines and in Australia a dessert wine may be called a stickie.

A Wine By Any Other Name

As there is no single name for a dessert wine, there is no single definition for dessert wines. There are several differing theories on what is and is not a dessert wine depending on where you are in the world. England seems to have the most complicated rules for determining a dessert wine’s status.

To qualify a wine must be sweet but must not be a white fortified sherry drunk before a meal or a red fortified port or Madeira drunk after a meal. A dessert wine in England can only be consumed during the meal.

In the United States the terms are more understandable but more rigid. There is a legal definition for dessert wine which states that any wine with more than 14 percent alcohol by volume is a desert wine.

Dessert wines are known for their high levels of sugar and their sweet taste. There are several different
ways winemakers add sugar during the winemaking process. Some choose to harvest grapes with high sugar content so the sugar is added to the mix naturally. Others choose to add sweetness to their mixture after crushing but before fermentation.

Sussreserve

In Germany dessert wines are submitted to a unique process that is hundreds of years old called Sussreserve. After a wine has completely fermented, must or grape juice, is added. This adds a measure of sweetness to the mixture and lowers the final alcohol content.

There are several reasons for the success of Sussreserve. First and foremost it produces an excellent and smooth dessert wine. It also dilutes the wine to acceptable German standards, no more than 15 percent alcohol by volume. For the winemaker the fermenting process is less complicated because he does not have to stop the process before all the sugars are gone. The success of Sussreserve has made the technique popular in New Zealand and other parts of the world.

Fortified wines are created when the winemaker adds brandy before all the natural sugars in the grapes have fermentated. The vintner’s term for intermingling different wines is mutage. Fortified wines include sweet Sherries such as Pedro Ximenez and Bristol Cream.

A Perfect Pair

A general rule in world of wine and food is that the wine you drink must never be sweeter than the food you eat. This can sometimes be difficult depending on the pairings or tasting menu you are offered. And, there are times, such as with the foie gras and Sauternes that you will gladly throw tradition to the wind.

The perfect pairing, says traditional wine lore, is a juicy and ripe peach with any dessert wine. The soft flesh of the peach is both sweet and tart, and excellent foil for the sweetness of the dessert wine. In Italy a traditional dessert pairs bitter almond cookies with a classic dessert wine, Vin Santo. The cookies are served on a plate around the wine glass for dipping in the wine.
