Wine Making at Crushpad:Where does a Wine’s Color Come From?

During the wine making process, red wine grapes often go through what is called a cold soak period prior to fermentation. This allows the skins to release the color and flavor compounds that add so much to our enjoyment of red wine. Not all grape varieties need, nor benefit from, long soak periods. Crushpad winemaker, Kian Tavakoli explains which varietals you might think about putting through a cold soak, and which varietals you needn’t bother.
